What are Fifteens (15s cake recipe)?

Fifteens are a popular sweet treat from Northern Ireland made with marshmallows, digestive biscuits (graham crackers in US), coconut and cherries.

They are called Fifteens (15s) because the recipe calls for fifteen of each ingredient.

All you need are 5 Ingredients

  • Digestive Biscuits (graham crackers in the U.S)best described as whole wheat shortbread, and are crisp like shortbread and equally as buttery.
  • Marshmallows – you can use large marshmallows – pink marshmallows and white one too
  • Maraschino cherries (candied cherries or glacé cherries)
  • Sweetened condensed milk
  • Coconut

How to make Fifteens (15s)?

Nothing easier..Simple as mix all ingredients, roll the moist dough on a clean surface in coconut and place it in the fridge

  1. Crush the digestive biscuits (graham crackers) in a food processor and add them to a large mixing bowl. Cut each large marshmallow into small pieces and add them to the large bowl with halved cherries and sweetened condensed milk. Mix the ingredients until well combined. You’ll get a moist sticky dough consistency
  2. Add a generous layer of coconut coconut over a large piece of plastic wrap, on a clean surface. Add the mixture to the wrap and shape into a long sausage. Sprinkle more coconut over the top of it and wrap the cling film tightly around, twisting the ends together.
  3. Place in the fridge and refrigerate overnight.

Really, really easy to put it together and soooo good!

Can you freeze Fifteens?

Absolutely! You can always make a bigger batch and freeze part of it. Have added a couple of tips on how to best freeze Fifteens below:

  • you can freeze Fifteens as a whole or cut into the slices, individual pieces;
  • if you’re freezing as a whole, wrap in plastic wrap and freeze
  • if you’re freezing slices, wrap each slice first in plastic wrap (so they won’t stick together) then add a layer of foil and place it into an airtight container in the freezer
  • slices kept in the freezer will taste best within the first month, but can definitely last longer.

Oh! and of course, if you plan to freeze them, do not cover them with shredded coconut. Freeze just the no bake tray bake mixture.

Fifteens Recipe Variations:

After receiving a lot of emails asking me about different variations of this Classic Northern Ireland tray bake recipe, here are some of I have tried and worked fantastically …or not quite 🙂

  • Fifteens without Cherries – this is the most asked question! Yes, you can skip the candied cherries (glace cherries) if you don’t like them and follow the recipe skipping the step where you add cherries. Everything else remains the same 🙂 You can even add some chocolate chips (bites) Maltesers, you if preferred. A lot of people are having them this way.
  • Fifteens with White Chocolate – some people prefer to make Fifteens in a square/ rectangular tray, without coating it in shredded coconut. They add some melted white chocolate on top and place in the fridge to cool down and set. This version of Fifteens is usually served cut in squares. Personally, I find it very sweet this way, if you have also marshmallows and candied cherries too 🙂 Not to mention the condensed milk….
  • Fifteens withMaltesers– quite a popular version. In most cases the candied cherries are replaced with crushed Maltesers and the rest of the recipe is the same.

How to make traditional Irish Fifteens (15s) cake. Really quick and easy no bake traybake recipe and some variations of the traditional recipe.

Ingredients

  • 15 digestive biscuits (graham crackers in US)
  • 15 marshmallows (or mini marshmallows)
  • 15 candied cherries (glacé cherries), cut in half
  • 200 ml condensed milk
  • 1 cup desiccated coconut, to coat

Instructions

  1. Crush the digestive biscuits (graham crackers) in a food processor or in a plastic bag with a rolling pin, then add them to a large mixing bowl. Cut each marshmallow into 4 pieces (if you are using regular sized marshmallows) and add them to the bowl with halved cherries and condensed milk. Mix until the ingredients are well combined and you have a sticky mixture.
  2. Sprinkle most of the coconut over a large piece of cling film (or wrap). Add the mixture onto the coconut and shape into a long sausage. Sprinkle more coconut over the top of it and wrap the cling film tightly around, twisting the ends together.
  3. Leave in the fridge to chill overnight or place it in the freezer for a couple of hours if you want to serve it on the same day.
  4. Remove from fridge/ freezer cut into slices and serve.
